Broiled with Thai Coconut Curry Sauce | Serves 4 | Cooking Time – 30 minutes

Add 2 teaspoons of minced fresh ginger and 2 garlic cloves to ½ teaspoon of hot oil in a non-stick skillet. To this, add 1 cup of finely cut red bell peppers and 1 cup of chopped onions. Cook for a minute and stir in a teaspoon of curry powder, 2 tsp of red curry paste, ½ tsp of ground cumin, 4 tsp of soy sauce, 1 tbsp brown sugar and ¼ tsp salt. Pour in a can of light coconut milk and let it simmer before throwing in 2 tbsp of cilantro.

Brush 4 tilapia filets with some oil, sprinkle some table salt and broil for 7 minutes on a baking tray until it flakes easily. Serve with sauce and on a bed of fragrant long grained rice.

Sauteed Tilapaia with Lemon-Peppercorn Pan Sauce | Serves 2 | Cooking Time – 20 mins

Combine 3/4 cup of chicken broth, ¼ cup of lime juice and 1 ½ tsp of drained brine packed green peppercorns, lightly crushed. Then melt 1 tsp of butter with oil on a pan over low heat. Sprinkle 2 fish filets with salt and pepper and dredge it in all-purpose flour; shake off the excess flour. Once the butter turns golden brown, add the filet in the pan and saute for 3 minutes on each side, turning up the heat. Remove the filets from the pan, add the broth mixture and stir gently till it boils and reduces to ½ sup. Stir in 2 tsp of butter and pour sauce over the filets.

Grilled Tilapia Lavash Wrap | Serves 5 | Cooking Time – 30 minutes

In a mixer, blend a bunch of dill, ½ bunch of paisley, ½ cup of olive oil, 2 garlic cloves, ¼ cup lemon juice and 1 tsp salt. Then make the wrap by kneading 250 grams of flour, 300 grams of yeast, 1 cup of salt, ½ cup sugar and 1 litre of water. Create small balls and roll out into thin sheets. Then cook halfway by placing the sheets in the oven at 500 degrees for 30 seconds. Rub salt and pepper on both sides of the tilapia filet, grill and then pan sear. Assemble your wrap and finish with a squeeze of lime.

Seafood Stew with Tilapia | Serves – 2| Cooking Time – 30 minutes

Heat 1 tablespoon olive oil over medium high heat, add 1 chopped onion and 2 minced cloves of garlic. Sautee for 8-10 minutes and add 2 diced tomatoes, 1 ½ cup of water, 250 grams of diced, red potatoes, 1 fresh green chilly or jalapeno, ½ tsp ground cumin, ½ tsp chilli powder and ½ tsp salt and bring to a boil. Reduce heat, cover and simmer for 20 minutes until potatoes are tender

Then stir in the seafood – 350 grams of shelled, deveined prawns, 250 grams of rinsed and cut chunks of tilapia and 125 grams of fresh calamari rings. Cover and simmer till fish is opaque. Cut the thickest piece to test and then stir in 2 tbsp of fresh cilantro. Serve stew over a bed of herbed quinoa.

Tilapia and Mixed Vegetable Stir-Fry | Cooking Time – 10 mins | Serves 2

Cut 2 tilapia filets into 2-3 inch pieces and place them in a bowl. Add to the bowl, 2 tbsp soy sauce, ½ cup shaoxing rice wine (or dry sherry), ½ tsp sesame oil, 2 tsp corn starch, and ground white pepper. Let it marinate.

Chop 1 cup mushrooms, 1 red bell pepper, 1 hot green pepper, 1 small onion, 2 scallions and 2 cloves of garlic. In a wok, add oil and fry 1 inch piece of ginger along with the garlic. Then add the sliced onions and fry for 2 minutes. Add both peppers and fry again. Last, add the mushrooms and stir for 2-3 minutes. Add fish and ½ cup water to the wok. Cover the pan and lower the heat, letting everything steam. Once fish turns opaque, uncover the wok and turn up the heat. Add scallion and gently toss, stirring for another 2 minutes. Plate and serve.
